This Recipe Will Change Your Life

First of all, thank you so, so much for your response to my secret yesterday. From the time I hit publish, I was shaky and nervous all evening. I was quickly flooded with comments and notes and support from more people than I thought even read my blog :). It means the world to me to have other people on this journey with me, and it's like a breath of fresh air to be able to talk about it on here now. More to come on that.

And now, I present to you my new favorite thing. I saw this recipe for quick egg soufflé this morning and tried it within 20 minutes. You guys, it was so good. I cooked just one egg with salsa in it, but the recipe calls for more egg whites. I'm a firm believer in the whole egg, and if I'm still hungry I can always whip up another one because it takes TWO MINUTES and eggs are awesome for you!

Here's what you do:
1. Crack an egg in a mug (and mix it up with a fork).
2. Stir in some salsa (I did about 2 tablespoons- I really like salsa :)).
3. Put it in the microwave for 2 minutes.
4. Add more salsa if you're me.

The end.

So easy, right?! I always want eggs but I don't want to make a mess or take the time. No mess. No time. Delicious. Who knew you can make eggs in the microwave?! I'm hooked.
