Domesticity

Although I am a stay at home mom, I am not a naturally domestic person. In fact, I am not really naturally talented at very many things.  That does not mean that I don't think that I am GOOD at anything.  I think I'm good at a lot of things, but they don't come naturally to me.  Domesticity is definitely one of those things.  But I'm learning.  S-L-O-W-L-Y.  

Dinner is one of the areas that I am probably lacking the most.  I don't like cooking.  Not even a little bit.  I love to bake, but I don't like to cook.  However, I also have 3 children who like to eat and, although we frequent fast food joints more than I care to admit, I do try to feed them decent, balanced meals.  Which means I have to cook.  It's a catch 22 really.  

I recently discovered a little trick that has been a huge help to my dinner struggles: frozen meals.  I am working hard to develop the art of freezing meals ahead of time.  Then I only have to cook for a couple of days and I have dinner for a couple of weeks!

The last two days I have been slaving away making frozen dinners.  I ended up with about 14 meals, many of which will probably include leftovers!!


Here's what I made:
- 3 taco soup dinners with mini cornbread muffins
- 2 dinners of buttermilk rolls stuffed with cream cheese and chicken
- 2 dinners of broccoli/cheese/rice/chicken casserole
- 16 breakfast burritos, individually wrapped, that will be about 3-4 dinners for us
- 3 chicken pot pies 


Not only are these dinners wonderfully handy to have on hand for the kids and I, since evenings are nuts-o around here (hubby is a CPA, he doesn't eat at home this time of year), but it's also great to be able to grab a meal out of the freezer and take it to a friend who is sick or just had a baby.  

After all this work, though, I think we are going to hit up Sonic for dinner tonight.  The weather is gorgeous and I want to take the kids to the park for a picnic.  Plus, I'm all cooked out :)

  4. I love doing this too! Makes life so much easier on those days when you need to get a good dinner on the table!! One blog I love with great recipes, and a freezing meals tips and tricks in Annies-eats, she is a doctor and she has two little kids and comes home and cooks amazing meals! She's so inspiring and so are you!!

  7. this is great idea! i also do this. popping frozen lasagna out of the freezer in a pinch makes me look like i can do anything on a short notice! I have a stash!!
