Easiest Rolls EVER

Okay peeps, there's one thing ya'll should know about me (other than the fact that I'm still trying to learn the correct way to use ya'll in casual conversation. I've been a Texan for almost five years it's about time, right?).  I love baking.  I do.  I love bread and rolls and cakes and cookies and pretty much anything that would be illegal on the Atkins diet.

I also have 3 kids who pretty much need me almost all the time, so complicated, time consuming recipes are out.  Last year a good friend of mine introduced me to the easiest roll recipe ever and I love it.  The beauty of this recipe is that you can make it ahead of time, put it in the fridge, and have fresh rolls all week long!  Talk about looking like a top-notch homemaker.  I made these on Saturday night and used the dough for orange rolls on Sunday morning.  Then I used the dough for dinner rolls Sunday night.  I pretty much felt like super-mom after that.

Buttermilk Rolls

3 C buttermilk
1 tsp baking soda
2 T yeast
1/4 C warm water
2/3 C sugar
4 eggs
2 tsp salt
1/2 C butter
9 C flour

Heat buttermilk until warm ( I do 2-3 min in microwave, warning:it gets stinky cause it's buttermilk), add soda.  Dissolve yeast in water.  Beat together eggs, sugar, salt and butter.  Add buttermilk, soda, and yeast.  Add flour, enough to make a soft but workable dough, knead. The dough should barely stick to your finer when you poke it. Put in a refrigerator until doubled or just put it into 2 gallon size ziploc bags until you're ready to use it.  I usually spray my bags with cooking spray so the dough doesn't stick to the inside of them. When you're ready to use the dough, shape the dough into rolls. You can use as much or as little of the dough as you need. Let rise 1 to 2 hours.  Bake at 350 degrees for 15 min.  Makes 5 dozen. Can refrigerate for up to a week in a ziploc bag.
